INGREDIENTS:
For the Cake
3 2/3 cups cake flour 450g
2 1/4 cups granulated sugar 480g
2 tsp baking powder
2 tsp kosher salt
1.5 cups whole milk 355ml, room temperature
8 egg whites room temperature, large
1 tbsp vanilla extract 15mL
17 tbsp unsalted butter 240g, room temperature
1/3 cup sour cream 80ml, room temperature
For the Milk Mixture:
3/4 cup whole milk 177ml
14 oz sweetened condensed milk 397g
12 fl oz evaporated milk 354mL
For the Frosting:
3 cups heavy whipping cream 710ml, cold,
1 cup confectioner’s sugar
8 oz mascarpone cheese room temperature
1 tsp vanilla extract
I used:
568ml double cream
150g sugar
200g custard
